
There’s nothing like a tasty, fresh salad on a hot summer (early fall?) day. I love this salad at lot and make it often – for a light lunch, as a side for dinner, or to bring to a potluck. I like to make my own dressing to put it over the edge!
Strawberry Spinach Salad
4 cups baby spinach
1 cup broccoli florets, chopped small
¾ cup strawberries
½ cup pecans
¼ cup feta cheese (optional)
Dressing:
¼ cup oil
2T white sugar
1/8 cup red wine vinegar
1T balsamic vinegar
1/4t Worcestershire sauce
1/8 t garlic powder
salt and pepper to taste
- you could use all balsamic, or sub cider vinegar for the vinegar. I used all red wine vinegar and thought it needed a bit more flavour.
Put spinach into a bowl. Chop up broccoli, strawberries, and pecans. Dump on top of spinach and mix.


Add crumbled feta cheese. Put all dressing ingredients into a container and whisk. Add dressing right before serving.
