This is a recipe that my grandma always use to make for us growing up. I started making it a few years ago for holiday get-togethers and I still get compliments on it every single time, though I’ll admit, my grandma still makes it the best. It’s gooey, creamy, cheesy, and most of all – SUPER easy to make. Perfect for a quick holiday side dish that people will love.
Potatoes Romanoff
6 large potatoes
1 tub sour cream
1 cup grated cheese, plus a bit extra
salt and pepper
1t paprika

Wash and peel your potatoes. Cut them into bite size chunks. Put into pot and cover potatoes with water. Bring to a boil and let cook until you can stick a fork into a piece and it splits, about 15 minutes.
Remove potatoes from heat and drain. Put into a large bowl. Sprinkle potatoes with salt and pepper. Pour sour cream into the bowl, and add cheese. Stir carefully so you don’t mush the potatoes.
Empty the potatoes into a buttered casserole dish, and top with more grated cheese. Sprinkle with paprika.
Cook uncovered at 350 degrees for 20 minutes, or until heated through.

Those look delish! I will try making them sometime when hubby’s not around for dinner. All that cheese and sour cream would do him in!
oh yeah, it’s pretty heavy…that’s why it’s a nice, indulgent, holiday dish! (but i still make it for dinner sometimes too)
