Dinner for Two

I made a somewhat quick, yummy dinner for two today. It’s Tyler’s 30th birthday and he has to head off to play a gig for Pepsi. Sigh. But at least he had a delicious, meat and potatoes (man-pleasin’ food?) meal on his special day.

Steak
2 steaks
Marinade:
1/4 c vegetable oil
1/4 cup Soy Sauce
2T red wine vinegar
2T lemon juice
1T Worcestershire sauce
1T Dijon mustard
1t black pepper
1t Montreal style steak spice mix
1 clove garlic, pressed
1/4 onion, chopped
Mix marinade ingredients and place in bag with steaks. Let sit overnight, turning once in the morning.
I cooked ‘em on my trusty George Forman grill for about ten minutes. Yum.

Twice Baked Potatoes
Prick 2 potatoes with fork, and bake in oven at 350 degrees for an hour or until fork goes in and out cleanly.
Let potatoes cool (can put them in the freezer to speed this up), then scoop out potato flesh into a bowl and add:
1/4c sour cream
1/4c milk
2T butter, melted
salt and pepper to taste
1/4c cheese grated finely
Beat with an electric mixer for a minute or two until smooth, then scoop back into potato shells. Top with bacon bits and a bit more cheese, the bake at 350 for 15 minutes, or heated through.
Note: these freeze well if wrapped tightly with foil and then plastic.

Roasted asparagus
Wash asparagus and dry really well so they won’t steam in the oven. Cut the ends off the spears, then lay on a baking sheet and drizzle with oil (about 1/4c should do). Roll around until evenly coated, and sprinkle liberally with salt and pepper. Roast in oven at 450 degrees for 15 minutes.
