Challenge: Eat Salad Every Day

So, I decided not long ago that I wanted to challenge myself on a weekly basis to do something different. Just as a way of making a point to do something make myself feel better and healthier, and happier.

This week, I am going to try to eat salad every day. Because?

1.) It’s good for you

2.) I always buy lettuce and it goes bad in the fridge and then I feel bad for wasting it

3.) I like salad

4.) I should really eat more veggies

More reasons needed?

Here is today’s salad, modified from The Gluten Free Goddess:

Spinach salad with a Maple-Vinaigrette dressing

To make salad, toss together:
2 cups baby spinach
1/4 cup chickpeas (rinsed and drained)
1/8 cup pecans, toasted lightly
½ pear, chopped

Dressing:
2 T olive oil
1.5 T balsamic vinegar
1 T pure maple syrup
1/2t Dijon mustard

Whisk ingredients together, then drizzle over salad. I didn’t use the whole amount but you can if you want!

Enjoy your light lunch, or side dish! Mine is tasty, and I think I can hear birds chirping outside so even with the snow drifts everywhere…I’m thinking it’s about time for spring.
