Mmm. That’s better.
This simple little salad is inspired from one of my old roommates, Melissa. She used to prep it the night before to take to work. She made one for me one time and after that, I started taking it to work for lunch, too!
Mandarin Chicken Ranch Salad
To make salad, toss together:
2 cups baby spinach, mixed greens, or romaine lettuce
1/2 can mandarins, drained
1/8 cup slivered almonds
1/2 cup baby tomatoes, chopped (if they are big)
1/2 cup chicken, cooked and sliced
Drizzle with ranch dressing, and toss.
Bonus: if you have leftover sour cream laying around you can whip up your own ranch dressing in a flash. I used the bottled stuff today (to save time!) but homemade is reeealllly good.
