Oh my goodness – what could be better than my favourite sandwich elements in a bowl? This salad is so good, and easy to toss together, and filling! What’s not to like? Use a low fat ranch (or home made dressing) and the calorie count isn’t even too bad.
Turkey BLT Salad
adapted from Cook This, Not That!
2 slices of bread, cut into cubes
1/2 tsp oil
4 strips bacon, cooked and crumbled
1 tomato, chopped
8 oz turkey, cubed (get a large slab from the deli, instead of thin slices)
1 head romaine lettuce, or 3-4 cups baby spinach
Preheat oven to 305 degrees, toss the bread cubes with oil and spread on a baking sheet. Bake for about 12 minutes until golden brown and getting crispy. Combine croutons with the bacon, tomatoes, lettuce, turkey, and lettuce, then drizzle with ranch dressing.
note: original recipe called for cucumber as well. Cubes of cheese would also be good in this!
