Salad Spinach Omelet

I totally cheated. I didn’t make a salad for lunch today – I wanted something warm. Check it out outside:

Brrrr. So much snow, and the roads are not great, and Tyler is out teaching with the car that has snow tires so I didn’t want to make a grocery store run to complete the ingredients for my cool, yummy salad ideas. But I’m not too upset with myself because I’m trying to use up this baby spinach:

And my lunch today helped! In fact, it used typical salad ingredients: baby spinach, tomatoes, onions, and a sprinkling of cheese. Plus, it was warm and filling. May still have salad on the side at dinner.

Salad Spinach Omelet

Ingredients

1/2 Tablespoon butter
2 eggs
1/2 tablespoon milk
1/4 cup chopped onion
1/4 cup chopped tomatoes (I used a few cherry tomatoes)
1.5 cup torn baby spinach leaves
1 tablespoon grated Parmesan cheese
salt and pepper to taste

Directions

Sauté chopped onions in butter in a small skillet over medium-low heat for 2 minutes, then stir in spinach and cook for 2 more minutes.
In a bowl, beat the eggs and milk with a fork, then stir in chopped tomatoes and Parmesan cheese. Sprinkle with salt and pepper, the pour into pan. Cook the egg mixture about 4 minutes, until partially set and edges look solid. Flip with a spatula, and continue cooking for 3-4 minutes.
Flip the sides up, and put on a plate. Eat while it’s hot!

Mandarin Chicken Ranch Salad

Mandarin Chicken Ranch Salad recipe

This simple little salad is inspired from one of my old roommates, Melissa. She used to prep it the night before to take to work. She made one for me one time and after that, I started taking it to work for lunch, too!

Mandarin Chicken Ranch Salad

To make salad, toss together:
2 cups baby spinach, mixed greens, or romaine lettuce
1/2 can mandarins, drained
1/8 cup slivered almonds
1/2 cup baby tomatoes, chopped (if they are big)
1/2 cup chicken, cooked and sliced

Drizzle with ranch dressing, and toss.

Bonus: if you have leftover sour cream laying around you can whip up your own ranch dressing in a flash. I used the bottled stuff today (to save time!) but homemade is reeealllly good.

Salad Day 2 – Mardi Gras

Day 2 of the week of salad. Of course, there is less than an hour left in today – so much for eating salad every day and posting about it! But in my defense:

1.) I was tired today and had a nap on my lunch hour instead of making salad.

2.) It’s Mardi Gras and I wanted to go down to see the duelling pianos tonight instead of making salad.

3.) Even though it’s bitterly cold, freezing and icy outside and I wanted some nice warm pasta, or ribs, or…well, pasta – I GOT a salad!

4.) Unfortunately that doesn’t help with the lettuce starting to wilt in my fridge.

But enough of justifications and list-making for now. It’s Mardi Gras today and of course, Fat Tuesdays in the market is featuring a duelling pianos show, featuring the wonderful Tyler Kealey and Dave Kalil (I met the guys on their dinner break; they played from 5-7pm and started again a bit after 9pm, til probably 1am or so).

Only today will you see people wearing feathered masks, and bras and tights as clothes in the chill of winter (ok, maybe on Halloween too…) and after I came out of a stall in the ladies bathroom, I came face to face, well, chest, with a 6 foot 5 drag queen in a bright red, sequined mermaid dress and long bleached blonde wig giggling with her (?) friend, who was equally as tall, wearing an equally as tight and slinky black dress. Needless to say, the night was just beginning as I left and I’m looking forward to some funny stories from Tyler later.

BUT! My salad:

Baby greens and romaine drizzled with balsamic citrus vinaigrette topped with caramelized onions, fire roasted peppers, sun dried tomatoes and crumbled goats cheese.

Honestly, I should have gotten the pasta. I love goat cheese, and the onions were fine, but the red peppers were icky and slimy and large, and the sundried tomatoes on salad are not really my thing, apparently. The whole thing didn’t really come together that well and wasn’t too filling, either.

I will make my own salad tomorrow. Promise. For now, I’m off to rummage through my cupboards for some crackers to tide me over!
